Our summer holidays were very relaxed. They were filled with ice-creams and not too healthy treats. So now that we are back to school, routine and time-tables, we are also going back to healthy eating and trying to get back into shape (especially me…).
A healthy dessert that tastes like a treat -1
This dessert is one of my kid’s favorites – they call it “my secret recipe”, which is funny because it is not a recipe, there is no cooking, it’s more like an assembly job.

To make this lovely dessert for 2 monkeys, you will need:
– Natural Greek organic yogurt
– Honey
– 10 strawberries
– 2 handfuls of pistachios

1 – Serve 3 tablespoons of yogurt (or as much as you want) in each bowl and add a layer of honey on top.

2 – Then, chop the strawberries and layer them on top.

3 – Peel and crush the pistachios and scatter them on top of the strawberries.

Add a child to the mix and see it been inhaled in seconds.

Of course this dessert is not only for kids. Adults are allowed to have it too! Only if they are good 😉

Oven-dried tomatoes salad
Before I left Ireland, I was trying to make sure that there was enough food for Mr B, who won’t be joining us until the beginning of August. I left the freezer full and I made sure that he had enough fresh fruit and vegetables to last him for few days (I know, I am adorable….)

While trying to clear out the kitchen of food that would not be used in the following week, I realized that there were 3 punnets of cherry tomatoes, my favorite food. Although Mr B likes tomatoes, I knew there was no way he would eat them all before they went off so I decided to oven-dry them in order to make them last.

Oven-dried tomatoes are very easy to make, a great solution to make those extra tomatoes last and sooooooo sweet…. Just delicious!

Place the cherry tomatoes in an oven tray, season them with salt and pepper and spray them with some olive oil and place them in a pre-heated oven at 120 degrees Celsius (250 Fahrenheit).
Leave them in the oven for 2 and half hours shaking them a little bit half way though.

You can use these tomatoes straight away for salads or sandwiches or you could just store them in a jar with olive oil and eat them as you please. that is if you can wait…

Summer days, whether they are hot or not, they call out for ice-pops and especially if you are under 10 years of age, or 20, it depends 😉

I have been making ice-pops in my house since the boys were tiny and it means that I don;t have to think twice about giving them out as I know exactly what went into them.

There are two kinds of ice-pops that we tend to make in my house: one with just juice and a bit of honey; and the other one is more like a smoothie with yoghurt. The kind I am sharing today is neither. It is a new kind. It is not pure juice but it is dairy-free as I am using Almond Milk.

To make these DAIRY-FREE ICE POPS, you will need:
10 Strawberries
1 Banana
150 ml Almond Milk
Teaspoon honey
Ingredients for healthy Ice-Pops
Blend the strawberries with a couple of spoonfuls of water and add them to your ice-pop containers. Pop them into the freezer for 2 hours.

After two hours, blend the banana with the almond milk and the teaspoon of honey and add them to the containers, pop the stick in and back into the freezer for another 2 hours.

They are easy, they are healthy, the variations are endless, a great way for kids to eat fruit and they are guilt free – perfect!!

The boys requested a pajama day. We have been out of the house so much lately that I guess they needed to be at home playing with their own toys for a while. I was also tired and eager to get few things done in the house so I was happy to go along with it.
Comfort Food - Chorizo and Egg Sandwich
For lunch time, we decided to go with comfort food. Chorizo and eggs are always favorites around here and if you put them in a sandwich they become the ultimate quick comfort snack.

Pop 2 slices of bread on the toaster. Meanwhile, put a pan on a medium hob while cutting the chorizo very finely. Add the chorizo to the dry pan moving it around slowly and allowing the oils and paprika to come out. This will only take a couple of minutes.

Arrange the chorizo on top of one of the toast, add a tiny bit of oil to the pan and fry the egg. Season it with salt and pepper but go easy on the salt as the chorizo is already salty. Arrange the egg on top pf the chorizo and make a hole on the other slice of bread over the yolk.

We like using the circle to dip it into the yolk and eat the rest as a sandwich. It is messy, but it is delicious.
