Happy Friday lovely people. Today I am very excited! It is a long weekend here in Ireland and the Riverfest in on in Limerick this weekend! Big Yay!! We have the Great Limerick Run, barbacues, artisan markets, friends coming over… I am so happy!  But before my brain shuts down with excitement (it happens a lot unfortunately) I better get on with today’s post.

I have mentioned before how much our family loves creating new traditions. A couple of years ago, we started having Cinema Nights on Friday where, at the end of the day, we would all pick a film and sit down and watch it with popcorn and a hot chocolate as a family. Shortly after, cinema night developed into Pizza and Cinema Night. It was lovely and cosy, proper quality family time. We would all make the pizza together and then sit down to enjoy the film as a family.

As years passed by, the kids started inviting their friends in for cinema night, so slowly but surely Mr B and I have been relegated to the kitchen. Although it was hard at first, we realise that this is healthy and part of growing up. We still have plenty of quality family time and we still all make the pizzas together which is very important to us.

This pizza recipe is easy and simple and there is no resting time for the dough so you can make it with the kids from start to finish in one go.

375 gr of plain flour
1 teaspoon salt
1 tablespoon caster sugar
7 gr dried active yeast
2 tbspoon olive oil
225ml warm water

Combine all the dry ingredients in a large bowl. Make a well in the middle and add the oil and the warm water. With circular movement start mixing the ingredients. Dust a surface with some flour and transfer the mix into in and knead until you have a dough ball. Cut the ball into 4 equal parts and roll them out on to a large pizza pan. Top as desired. Bake in a hot oven at 190 degrees Celcius for about 20 minutes if it is a fan assisted oven or 20-25 minutes for others.
