You know when you find yourself cooking the same 10 things over and over? I am there. So there… So I have been looking for new recipes, but they need to be family friendly, not too complicated, healthy and nutritious. Not too much to ask, right?
We are great fans of Mexican food in my house and we love fish so I thought Fish Tacos would a safe enough bet.
The great thing about this recipe is that you can leave everything prepared and fry the fish at the last minute. Super handy!
FISH TACOS (Serves 4)
400 gr of white fish – I used haddock
1.5 tspn cayenne
1.5 tspn paprika
1.5 tspn ground cumin
1.5 tspn ground coriander
salt and pepper
Cut the fish into small bits and pieces and season it with salt, pepper, the rest of spices, the zest and the juice of half a lime.
Coat the fish with the flour, dip it into the egg and fry it in a pan with very hot oil. It will only take a couple of minutes. Take it out onto a plate with some kitchen paper. Squeeze half of the juice of the lemon onto the fish and sprinkle some coriander.
BLACK BEAN RICE
400 gr tinned of black beans
500 gr of cooked rice
2 garlic cloves
Add some olive oil to a pan and add the drained and rinsed black beans over medium heat. Let them cook for about 5 minutes and add the crushed garlic cloves, cook for 3 minutes. Season with salt and pepper and add the rice and cook it for further 7 minutes until the rice is warmed through. I live serving it with some spicy tomato sauce or with some spicy jalapenos.
You could make a lovely salad with cabbage and onion or just add your favorite fresh vegetables.
My original plan was to serve it with soft tortilla wraps but my Chaotic (and foodie) Monkey convinced me to get the “crunchy ones”, so we had them in the taco shells.
This one has definitely made it to our menu, it will become a regular…
