I love food and I love cooking. I love planning meals, sometimes even when I am having a meal, looking at recipe books, watching cooking programs… you get the idea…
I am always on the lookout for new recipes. I came across this recipe on a magazine recently and I knew that I had to try it. I love all the ingredients and we always have them.
COUSCOUS AND SPINACH FRITTERS
200ml hot vegetable stock
1 free range egg
3 tbsp fat free organic yogurt
100gr crumbled feta cheese
1 handful of fresh baby spinach
2tbsp black olives
salt & pepper
2tbsp sunflower or vegetable oil
Measure the couscous into a large heatproof bowl, pour over the hot stock and cover with cling film. Leave to stand for 5 mins or until the couscous has absorbed the stock and is soft. Add the beaten egg and yogurt and mix well. Season and then fold through the cheese, chopped spinach and black olives and mix well with your hands.
Wet your hands slightly and make 4 patties if you want them as burger size, or make 12 small ones.
Heat the oil in a non-stick frying pan and cook the fritters over a medium heat for 3 mins on each side until golden.
You can serve them with a green salad and some guacamole. Simply amazing
I love that they are very versatile. They can be burgers as a main or smaller as a lovely school lunch or a snack. You could also add some sun-dried tomatoes to the mix and they would probably be fabulous.
