I grew up in a house where all the dinners were made from scratch. All the sauces, all the soups. That’s they way I grew up and I guess it conditioned me. As a result, I don’t like sauces and soups from jars or tins, I don’t get them. They have very little nutritional value and they are high in sugar and salt. Home-made stuff is always better. It tastes better and it is better for you.

This tomato sauce is one I have been making for years. It is very easy to make, a one pot wonder, and it is super healthy. This recipe will make a big pot of tomato sauce. I usually jar the sauce and I keep it in the fridge to have handy for anything, from pizzas to pasta to meatballs and anything in between.

2 onions
2 carrots
1 large leek
1 green pepper
1 red pepper
4 cloves of garlic
2 x 400 gr tins of tomatoes
1 x 400 gr of pasata
olive oil
balsamic vinegar
dried oregano
How to make a healthy tomato sauce
Put 2 tablespoons of olive oil in a heavy based pot and put in over a medium heat. Chops the onions finely and add them to the pot. Chop all the other vegetables and add the to the pot one by one. Stir. Season with salt and pepper and cover. Let the vegetables sweat over low/medium heat for 10-15 minutes. When the vegetables are all soft, add 4 tablespoons of balsamic vinegar and let it reduce with the lid off. When the vinegar has evaporated, empty the 2 tins of tomatoes and the pasata. Remember to rinse the tins with a little bit of water so you add all the tomato goodness to the sauce.
Turn the heat up and bring it to boil. Then reduce the heat and let it simmer for 30 minutes.
When the time is up, blend the sauce with a hand blender until it is super smooth and transfer it to empty jars. It should be enough for 3 or 4 jars.

You can keep the sauce in the fridge or you can freeze it using plastic containers.
It doesn’t last too long in our house. We use it for comfort dishes and it is great for those days when you don’t feel like cooking but you don’t want to compromise in quality. fresh pasta and home-made tomato sauce is hard to bit.
