We love sushi in our house. One of the many things we love about sushi is that you can take it with you anywhere and you have a healthy meal without breaking the bank wherever you are. So I was thinking, how can I translate this meal into a healthy school lunch for the boys that doesn’t take too much time and it’s still delicious and fun. Mexican Sushi! (it was obvious, right?)

I am simply substituting the sushi nori with Mexican wraps and not adding any rice. It is a great alternative to the traditional lunch sandwiches and it is fun to eat.
Mexican sushi - salmon, avocado and carrots
Get your wraps and spread some cream cheese, cover the wrap with smoked salmon and drizzle some lemon on top for an extra zing. Cut the avocado and place it on the top and the middle of the wrap. With a vegetable peeler, cut some very fine slices of carrot and then make very skinny strips with a knife. Alternate the carrot with the avocado.From the top (where the avocado is) start rolling the wrap tightly. There might be some spillage from the sides, but not to worry. Once you have the rolls made, wrap them in cling film. If you are an organised person that plans lunches the day before, you can leave your rolls in the fridge until the morning. If you are not, role them on the counter top with the cling film to make sure that everything is nice, tight and secured. mexican sushi rollsYou only have to cut the Mexican sushi rolls as if you were cutting sushi and put them in the lunch box.
